Prebiotic Poke Bowl with Miso-Glazed Salmon

This tasty poke bowl contains microbiome-loving foods to keep your taste buds and your gut satisfied. Fermented foods such as miso, tamari, and sauerkraut are naturally rich in probiotics and introduce beneficial bacteria to the gut. Avocado, garlic, and brown rice are prebiotics that feed the ‘good bugs’ in the gut to support digestion and overall health.
Ingredients (serves 4):
- 2 salmon fillets, cubed
- 1 cup edamame beans
- 2 cups of cooked brown rice
- 1-2 avocados, sliced
- 2 cups mixed salad greens (e.g. spinach, mizuna, rocket, dandelion greens)
- ½-1 cup of fermented vegetables e.g. pickled carrot, cabbage, beetroot, grated
daikon, sauerkraut or kimchi
- ½-1 cup pineapple pieces (optional)
- Salt and pepper
- 2 tsp sesame seeds
- Toasted nori pieces (optional)
Marinade/Dipping Sauce
- 1 Tbsp miso paste
- 6 Tbsp tamari/soy sauce
- 1 tsp grated ginger, freshly grated
- 1 garlic clove, crushed
- 1 green shallot, finely chopped
- 1 tsp sesame oil
Method
- Cook brown rice and set aside.
- Whisk together marinade ingredients. Add half to a small bowl as a dipping
sauce and use the rest to coat the salmon well.
- Grill or bake marinated salmon pieces until lightly cooked.
- Slice avocado and prepare salad or other vegetables of choice (e.g. steamed
broccolini).
- Assemble poke bowls each with a serve of rice, salmon pieces, avocado, and
fresh and fermented vegetables.
- Sprinkle with sesame seeds and toasted nori to serve, with dipping sauce on the
side.
